Taco Tuesday

One of my favorite parts of summer time is making homemade salsa! I learned to make salsa from my aunt when I was around 12 and it has since then become one of my specialties. It is perfect by itself or on top of tacos! Here is my recipe…
Ingredients:
4 Mangos
1 Pineapple
1 Lime 
Cilantro
Onion (I like to use a purple onion for the color)   
Rice Wine Vinegar (crucial ingredient)
Jalapenos
  
1) Start my peeling mangos and pineapple. Cut into chunks (I only used 1/4 the pineapple) and put in a bowl. Try to use as much of the juices as possible.
2) Cut 1/4 onion into small pieces and add to bowl. 
3) Rinse a handful of cilantro and pick leaves off the stems (I say handful because some people LOVE cilantro and some do not so you can choose how much to use). Finely chop and add to bowl. 
4) Chop 6 jalapeno slices and add to bowl (I also add some juice from the jar to make is spicier).
5) Cut the lime in half and squeeze as much juice as possible into bowl. 
6) Add 1/4 cup of Rice Vinegar and salt and pepper to taste. 
7) Mix it up and bon appetit!
 
Want to make a tomato salsa instead? Replace the pineapple and mangos with tomatoes and add a dash of sugar at the end and you are good to go! 

Here is the finished product…Blackened Mahi Mahi tacos. YUM!
