Make it Monday: Pumpkin Mug Cake

I have seen a million recipes for pumpkin  mug cakes on Pinterest and I always saw them as an easy way to satisfy a screaming sweet tooth! Well this weekend the hubs and I realized we hadn’t consumed any baked pumpkin treats yet this year! (A girl can only live off of so many pumpkin spice lattes y’al)l. So instead of whipping up something big, like a pie that we’d end up wasting most of, I decided to take on the infamous mug cake! Full disclosure, all Pinterest mug cakes are NOT created equal lol!

I tried 3 recipes before I concocted the one I am going to share with y’all today. Thank God they were just little microwave cakes that take two mins to put together or I would have quit after the first one. I felt like Goldilocks trying each one. The first was too much like an omelette. The second was way too dry. The third wasn’t sweet enough! The struggle.

So, I decided to combine elements from each to come up with the recipe for the mug cake pictured above. I know it isn’t the prettiest (and I took a bite pre-photo) but it was the tastiest!

To make my mug cake, you will need 2 tablespoons of coconut flour (look at me being slightly healthy), 2 tablespoons of melted coconut oil, 1 egg, 2 tablespoons of pumpkin puree, 1/2 a teaspoon of baking powder, 1/4 teaspoon of vanilla extract, and 3 tablespoons of maple syrup (optional cinnamon to sprinkle on top).

Throw all these into a mug, mix, and microwave for 2 minutes.

Then your have tasty (and slightly healthy) snack. Notice the furry face in the right corner of the pic above…looks like the pup wants a bite too!

Ryan loved it, I loved it, and our sweet teeth (thooths? lol) were satisfied. Well, until Thanksgiving that is…I have my mind set on some pecan pie next!     This sounds so good! What an awesome idea, I’ve tried making a chocolate chip cookie in a mug and it came out awesome so I can only imagine how good this is!
